Baked Goat Cheese with Pesto
Ingredients:
Goat cheese
Basil Pesto
Roasted red and or yellow bell peppers from a glass
Pine nuts
Preparation:
Coat a 9 x9 inch glass or ceramic pan with pesto. Cut the bell peppers
into little pieces and place them on top of the pesto. Then slice the
goat cheese into 1/2 inch rounds and place on top of the peppers. Put
into 350 degree oven for 5 to 10 minutes, until hot and cheese is melting.
You will have to touch the cheese to see if it is melting as goat cheese
tends to keep its shape. Then let bake another 2 minutes after you sprinkle
on some pine nuts. Serve with toasted baguette or a ciabatta, or any
other favorite bread.
For the pesto I use fresh basil leaves (lots), a hand full of pine nuts, garlic to taste and enough olive oil to make a paste in the food processor. I do not use any cheese in my pesto. You could also buy pesto in a jar or tub and use that.
